KALE MASAMBA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kane Estate in Grand Prairie, Texas in 1988. Ingredients:
1 pound kale well washed and finely chopped |
1/2 teaspoon salt |
4 medium tomatoes chopped |
4 tablespoons peanut powder |
2 small white onions finely chopped |
Directions:
1. Prepare peanut powder by grinding roasted peanuts in blender until fine and powdery. Put kale in just enough boiling salted water to cover. 2. Cook over medium heat until soft adding more water as needed to keep from sticking. After 2 minutes put tomatoes, onions and peanut powder on top of kale but do not stir. 3. Reduce heat and simmer 15 minutes then stir and simmer 15 additional minutes. |
