Kale And Potato Soup With Homemade Turkey Sausage |

Very loosely adapted on kale and potato soup recipes I've seen all over the web. It was very easy and delicious, and even healthy! Ingredients:
homemade turkey sausage |
1 pound ground turkey |
fresh ground black pepper to taste |
kosher or sea salt to taste |
mixed italian dried herbs |
garlic powder |
crushed fennel seed |
hot pepper flakes |
2 tablespoons dry white wine |
olive oil |
1 onion, diced |
2 ribs celery (including some leaves) , diced |
4 garlic cloves, diced |
1 bay leaf |
6-8 cups chicken stock |
3 medium red potatoes, cubed |
2 cups kale, ribs removed and leaves cut into 1 inch pieces |
1/4 cup minced parsley |
Directions:
1. Combine turkey, spices and wine in a dish and refrigerate for 1-2 hours for flavors to combine. 2. Heat olive oil in soup pot and saute onion and celery until translucent. 3. Add turkey sausage and garlic and cook over medium-high until sausage is almost cooked through and slightly brown. 4. Add potatoes and kale and saute for 3-5 minutes until lightly coated with oil and just beginning to wilt. 5. Add stock and bay leaf. 6. Bring to a slow simmer and cook for 30-45 minutes until kale is softened, potatoes are cooked, and flavors are combined. 7. Add parsley and serve. |
