These potatoes go great with pan seared or roasted chicken. The family loves this dish with roasted chicken. Ingredients:
1 tablespoon olive oil |
4 small red potatoes cut to 1 cubes |
6-8 katamata olives, pitted and coursely chopped |
1/2 tablespoon basil, chopped |
fresh ground black pepper |
Directions:
1. Heat olive oil in skillet over medium heat. 2. In a single layer, add potatoes and cook, stirring occasionally until they begin to brown. Be sure to scrape the bottom of the pan to loosen and incorporate the potatoe bits . 3. Stir in the olives and basil. 4. Reduce the heat to the lowest setting. 5. Stir, cover, and cook 5 minutes or until the potatoes are browned. 6. Pepper to taste |
