The Spices of Life by Troth Wells. Kaklo (banana snacks) are from Kenya. Ingredients:
4 bananas, mashed |
1/2 onion, chopped finely |
1/2 tomato, chopped finely |
1/2 green chile, de-seeded and chopped finely |
1/2 tsp fresh ginger, grated |
4 tbs flour |
3 tbs water |
oil |
Directions:
1. Mix bananas, onion, tomato, chili and ginger. 2. Sift the flour into a bowl and slowly add the water, stirring to make a thick, smooth paste. 3. Now spoon this into the banana and tomato mixture. Combine well. 4. Pour enough oil into a wok to give a depth of 2-3 inches. When it is hot, add the banana mixture a teaspoon at a time and fry until golden. |
