Kai Yat Sai Talay (Thai Omelette With Seafood) |

An unusual omlette whose recipe I found in a magazine. I am yet to try this one. Quite frankly, I am all for a more... uhh... conventional omlette. Ingredients:
3 eggs |
200 g prawns |
150 g squid |
50 g green peas, frozen |
100 g snow peas, sliced |
100 g carrots, diced |
100 g onions, chopped |
30 ml tomato sauce |
1 teaspoon fish sauce |
10 ml soy sauce |
1 teaspoon garlic, chopped |
1 teaspoon sugar |
2 tablespoons corn oil |
salt, to taste |
Directions:
1. Fry garlic and onion till translucent. 2. Add prawns and squid and saute till cooked. 3. Add all the vegetables and sauces and stir-fry for 5 minutes. 4. In a medium bowl, whisk together the eggs and a little salt and pepper. 5. Heat the corn oil in a hot pan and pour in the egg mixture to make a thin, flat omlette. 6. Place the omlette on a plate and spread the cooked ingredients on one half of the surface. 7. Fold the other half over and garnish with chopped fresh coriander leaves. 8. Serve hot. |
