Something mom used to make for dinner parties before the Mississippi mud pie takeover. I actually liked this better because of the coffee flavor. Ingredients:
16 chocolate cookies crushed |
1/4 cup of melted butter |
1 cup of coconut |
1 pkg of unflavored gelatin |
1/2 cup sugar |
1/2 t. of salt |
1 /12 cups of milk |
2 t. instant coffee |
2 oz. unsweetened chocolate |
3 eggs separated |
1/4 cup of kahlua |
1/4 t of cream of tartar |
1/2 cup of sugar |
1/2 pint of heavy cream whipped |
Directions:
1. Mix crushed cookies, butter and coconut. Press into a nine inch pie pan. 2. Combine the next 6 ingredients, up to the eggs. Cook in the top part of the double boiler until all is blended and gelatin is dissolved. Cool. Add beaten egg yolks to the chocolate mixture. 3. Return to heat and cook until thickened about 5 minutes. 4. Add Kahlua, and chill until slightly thick. 5. Beat egg white until frothy and stir in the cream of tartar and beat until stiff, adding the sugar gradually. 6. Fold into the the chocolate mixture. Chill. 7. Whip cream and fold into other mixtures. 8. Spoon into pie shell. 9. Chill until firm. 10. Enjoy. |
