A favorite dessert in Berlin of strong coffee and almonds in a soufflé A truly wonderful dessert
Ingredients:
4 tablespoons butter
1/3 cup sugar
6 egg yolks
1 cup almonds, blanched and grated
1/2 cup double strength black coffee
2/3 cup fine bread crumbs
6 egg whites, stiffly beaten

Directions:
1. 1) Cream butter with sugar until light and fluffy, then gradually beat in egg yolks until well blended.
2. 2) Add almonds.
3. 3) Soak bread crumbs in coffee, adding more if necessary until all coffee is absorbed.
4. 4) Turn into egg yolk mixture and mix thoroughly.
5. 5) Fold in stiffly beaten egg whites gently but thoroughly with a rubber spatula.
6. 6) Butter a 6 cup pudding mold and sprinkle on sides and bottom with sugar. Turn filling into mold, cover and place in water bath that comes two thirds up the sides of the mold.
7. 7) Steam 1 hour.
