Kadayif Bourma- Middle Eastern Nut Rolls

When I was growing up I was fascinated by this dough, which the Armenian neighbor lady purchased at a special shop. She showed mama how to make it. It's typical of many Middle -Eastern syrup soaked pastries and is delcious! Read more ! Kadayif dough is a shredded dough with a consistency of phyllo dough . Interesting enough, Bourma may be made from phyllo dough but this recipe made with the shredded dough and baked in caske pans is really more unique .We have this recipe for over 50 years!
Ingredients:
1 lb purchased kadayif dough
1/2 to 3/4 lb unsalted butter melted
1 1/2 to 2 cups syrup
3 cups sugar
1 1/2 cups water
juice from fresh lemom
filling
1 lb walnuts chopped fine ( pecans may also be used )
1 tsp cinnamon
1/4 tsp ground cloves
1/3 cup sugar
3- 4 tbs honey
Directions:
1. Make syrup:
2. Boil syrup ingrdients together about 5 minutes
3. Mix filling ingredients together
4. Asemble:
5. Remove 1/2 inch layer of dough from package at a time.
6. Cut acrosss lengthwise.
7. Place 1 tbs of filling on the bias of one corner and start to roll up on the bias, adding more filling along the roll until 2 inches from the edges of the dough.
8. The filling should not be exposed.
9. Roll tightly.
10. Place rolls in well buttered round cake layer pans and arrange in a continuous spiral, starting at the center.
11. Pack tightly.
12. Dribble melted butter over spirals.
13. Bake in a 450F oven for 15 to 20 minutes until golden brown.
14. Cool to lukewarm.
15. pour warm syrup over Bourma and let rest 20 minutes.
16. Serve warm or cold
