This tangy East-African relish recipe is one you are sure to really relish having. Ingredients:
5 tomatoes, thinly sliced |
2 small onions, thinly sliced |
1 red fresh chili pepper, de-seeded and cut lengthways into fine slivers |
cilantro, finely chopped |
1 lime, juice of |
3 tablespoons olive oil |
salt & freshly ground black pepper |
Directions:
1. Place the tomatoes, sliced onions, chili and cilantro into a large serving bowl. 2. Mix together the lime juice and olive oil and toss this mixture through the salad. Season with salt and freshly ground black pepper and serve immediately. 3. This is the traditional version, but shredded cabbage or carrot can be added. |
