This is a great soup for cold winter/fall days. Ingredients:
2 cups split peas |
1 1/2 cups onions (chopped) |
1 1/2 cups carrots (diced) |
1 cup celery (diced) |
2 quarts chicken stock or 2 quarts broth |
1 teaspoon thyme (dried) |
1/2 teaspoon oregano (dried) |
1/2 teaspoon crushed red pepper |
1/2 teaspoon fresh ground pepper |
1 1/2 teaspoons garlic (granulated) |
1 bay leaf |
1 -2 ham bones, with meat (or 1-2 cups diced ham) or 1 -2 smoked ham hock (or 1-2 cups diced ham) |
1/3 cup dry sherry |
salt and pepper |
Directions:
1. rinse and sort Peas. 2. add Stock, peas, Meat (bone), vegetables, and dry ingredients. 3. bring to boil, simmer covered 2 hours. 4. remove bone and trim meat. 5. if not thickened, blend with hand blender. 6. add trimmed meat back to soup and Sherry. 7. bring back to boil and simmer 10 minutes more. 8. if too thick add some water and season to taste. 9. Serve with crusty bread! Enjoy! |
