Traditional Italian Table condiment used in the US for sandwiches. Ingredients:
2 cups celery, chopped fine |
6 chili peppers (serrano chili sliced thin with seeds) |
1 cup red bell pepper, diced |
1 cup green bell pepper, diced |
1 cup carrot, diced |
1 / cup red onion |
2 teaspoons garlic, sliced fine |
1/2 cup kosher salt |
2 tablespoons sugar |
2 1/2 teaspoons dried oregano |
1 teaspoon red pepper flakes |
1/2 teaspoon celery seed |
1 teaspoon black pepper |
1 cup white vinegar |
1 cup canola oil |
Directions:
1. -Add the 1st 7 ingredients into a large glass or metal bowl. 2. -Sprinkle on the salt and mix until well combined. 3. -Pour in the enough water to cover the vegetables. 4. -Cover with plastic wrap and refrigerate for at least 24hours. 5. -Drain the water and then rinse the vegetables under cold water to remove some of the excess salt. 6. -In a small bowl combine the garlic, oregano, red pepper flakes, celery seeds and pepper. 7. -Add the vinegar to the bowl and stir until combined. Then slowly whisk in the oil. 8. -Add the vegetables into a resealable container and top with the oil and vinegar mixture. Cover and refrigerate for at least 48 hours. |
