This is one of my all time favorites. Ingredients:
6 cups of diced potatoes |
5 cups of cubed corned beef |
2 tablespoons dried parsley (or 1/3 cup fresh) |
2 teaspoons garlic powder |
1 bell pepper, chopped |
3/4 cup onion, diced |
1/2 cup fresh chives |
1/4 cup oil or 1/4 cup bacon fat |
salt and pepper |
Directions:
1. peel and dice the potato 1/4 to 1/2 inch cubes,. 2. bring the potatoes to boil, about 3-5 minutes. 3. strain and rinse well, very well. should be soft, but not brittle. set aside. 4. saute pepper and onion until soft in 1 tablespoon oil oil. 5. add salt pepper and garlic powder, saute 2 mins more. 6. remove. set aside. 7. now saute potato in remaining oil until browned add parsley, beef and vegetable mixture. season with salt and pepper if needed. cook on medium high 10 minutes or until desired texture is complete. |
