A light and refreshing salad. Good for you and tasty!
Ingredients:
salad ingredients
1 head of romaine lettuce, chopped
1 16 oz can of kidney beans, rinsed and drained
1 16 oz can of garbanzo beans, rinsed and drained
1 cucumber, peeled and diced
2 tomatoes, diced
3/4 cup diced cheddar cheese
3/4 cup diced monterey jack cheese
vinaigrette ingredients
1/2 cup balsamic vinegar
2 teaspoons dijon mustard
1 cup of olive oil
salt and freshly ground pepper for taste
Directions:
1. 1. Toss all salad ingredients together in a bowl
2. 2. In a seperate bowl mix together the balsamic vinegar and mustard. Slowly whisk the olive oil and season with salt and pepper.
3. 3. Toss the salad with the vinaigrette and serve.
