Just Rice With Spinach Butter And Parmesan |

This is adapted from the silver spoon cookbook, it is comforting food. Ingredients:
1 package of frozen chopped spinach |
3 tbsp butter |
1 3/4 cup long grain rice |
1/2 cup parmesan cheese, freshly grated |
salt |
Directions:
1. Place the spinach in a bowl with tbsp water and microwave covered, for 5 minutes. Strain spinach liquid into a measuring cup. Press down on spinach to squeeze out as much liquid as possible. Add enough water to spinach juice to equal 2 1/4 cup liquid. 2. Season the 2 1/4 cup liquid with salt, bring to a boil and add rice. Simmer the rice in the liquid for 15 minutes, covered. 3. Melt half the butter in a skillet, add the spinach and cook over low heat for 5 minutes. 4. Drain rice, tip into a warm bowl or serving dish and stir in the remaining butter. Top the rice with the spinach and sprinkle with the Parmesan. |
