The sweetness of the peaches is a nice contrast with the kick of the jalapenos. This can be used as a dip or served over grilled chicken or fish. Ingredients:
1 1/2 cups peaches, peeled, pitted, and chopped |
1/2 cup sweet red pepper, seeded and finely copped |
1/4 cup scallion, thinly sliced |
1/4 cup fresh cilantro, roughly chopped |
2 tablespoons lime juice |
2 jalapeno peppers, seeded and finely chopped (leave the seeds in if you're into more heat) |
Directions:
1. Mix all ingredients in a bowl and chill for at least a couple of hours before serving. |
