Great summer use of your fresh peach harvest. Hard to imagine that I don't really even like desserts; I enter enough of them. Early on I figured out other people do and I better have some good ones. I've managed to collect a ton of them. Ingredients:
1 cup butter |
3 cups sugar |
6 eggs |
1 tsp vanilla |
1/2 tsp almond extract |
3 cups flour |
1/4 tsp baking soda |
1/2 tsp salt |
1/2 cup sour cream |
2 cups peeled, finely chopped peaches |
Directions:
1. Preheat oven to 350 degrees. 2. Grease and flour a 10 inch tube cake pan. 3. Cream butter and sugar until light and fluffy. 4. Add eggs one at a time, beating until well-blended after each egg. 5. Stir in extracts. 6. Combine dry ingredients and add to creamed mixture with electric mixture on low speed. 7. Fold in sour cream and peaches. 8. Pour the batter into prepared pan and bake in pre-heated oven for 75 to 85 mimnutes or until toothpick inserted in cake comes out clean. 9. Cool in pan 5 minutes and then turn out to cool completely. |
