Just Peachy Bread Pudding |

this is the best bread pudding ive ever tasted that has fruit in it its not just the same bread pudding it has a KICK to it. Ingredients:
2 1/2 cups of diced peeled peaches (fresh or frozen) |
1/4 cup of peach necter |
4 slices brioche bread, crusts removed, cut into 1-in cubes (4 cups) |
3 tblspn of unsalted butter melted |
1/2 cup of goleden raisins |
3 large eggs |
1/2 cup granulated sugar |
1 tsp of ground cinnamon |
1 3/4 cups half-and-half |
1 tsp vanilla extract |
brown sugar-vanilla sauce |
1/2 cup light brown sugar |
2tblspn light corn syrup (recommended:karo) |
4tblspn unsalted butter |
1/2 heavy cream |
1 1/2 tsp vanilla extract |
Directions:
1. preheat the oven to 325f. lightly butter a 2 1/2 quart baking dish and set aside 2. in a medium saucepan over medium low heat, bring peaches and peach nectar to a simmer. cookuntil peaches are tender, about 5 min 3. in a large bowl, gently toss the bread, melted butter, raisins, and peaches until the bread is completely coated. in a seperate large bowl, whisk together the eggs, granulated sugar, cinamon, half and half, and 1 tsp vanilla extract. add the bread mixture and mix gently. pour into prepared dish 4. bake until golden brown and center is set, about 1 hr 5. in a small saucepan,over medium heat, combine the brown sugar, corn syrup, butter, cream, and vanilla extract. bring to boil, stirring frequently. reduce the heat to medium low and cook for 5 min stirring continually. remove from heat sauce will thicken as it cools. drizzle over the top of bread pudding and serve warm or at room temperature |
