'just Like Mom's Ham-Stuffed Peppers |

6 green bell peppers, medium |
2 eggs, lightly beaten |
1 1/2 cups corn (whole kernel, fresh or canned) |
1 1/2 cups ham (cooked, diced) |
1 cup tomato, chopped |
1/2 cup soft breadcrumbs |
1/4 cup celery, finely chopped |
2 tablespoons butter, melted |
1 tablespoon onion, finely chopped |
1 teaspoon salt |
Directions:
1. Preheat oven to 350 degrees. Slice tops from peppers, core and remove seeds. Boil in salted water 3-5 minutes. Drain well. Combine all remaining ingredients in a large bowl. Spoon mixture evenly into pepper shells. Place peppers upright in a greased baking dish. Pour small amount of water to cover bottom of dish, cover dish with foil, then bake 50-60 minutes (may be frozen and reheated. |
