Jurgita's Healthy Chicken, Cashew and Apple Salad

This salad has it all- crunchy, moderately sweet & salty, refreshing. A great meal with balanced protein, carbohydrate and healthy fats from nuts!
Ingredients:
1/4 cup raw cashews, crushed in medium pieces
1 t sesame seeds
1 cup boiled chicken breast, cut up in pieces
2 cups iceberg lettuce, chopped
1 cup cucumber, diced
1 celery stalk, diced
1 medium apple, diced
1/2 cup plain fat-free yogurt
1/4 tsp salt
1/4 tsp ground black pepper
1/4 tsp ground cumin or curry powder
1 t scallions, chopped
Directions:
1. Mix all the ingredients in a big bowl.
2. Divide into two servings.
3. Enjoy! :-)
