Jurgita's Healthy Chicken, Cashew and Apple Salad |

This salad has it all- crunchy, moderately sweet & salty, refreshing. A great meal with balanced protein, carbohydrate and healthy fats from nuts! Ingredients:
1/4 cup raw cashews, crushed in medium pieces |
1 t sesame seeds |
1 cup boiled chicken breast, cut up in pieces |
2 cups iceberg lettuce, chopped |
1 cup cucumber, diced |
1 celery stalk, diced |
1 medium apple, diced |
1/2 cup plain fat-free yogurt |
1/4 tsp salt |
1/4 tsp ground black pepper |
1/4 tsp ground cumin or curry powder |
1 t scallions, chopped |
Directions:
1. Mix all the ingredients in a big bowl. 2. Divide into two servings. 3. Enjoy! :-) |
