Junior League - Mexican Rice |

This is a great spicy version of traditional Mexican rice! Ingredients:
1 1/2 cups rice |
2 tablespoons vegetable oil |
3 tomatoes, chopped |
1 onion, chopped |
1 jalapeno chile, chopped |
2 teaspoons cumin seeds |
1/2 teaspoon garlic powder |
1/2 teaspoon pepper |
fresh cilantro |
minced bell pepper |
carrot |
3 cups boiling water |
Directions:
1. Saute the rice in oil until golden brown. Stir in tomatoes, onion, jalapeno, cumin, garlic, pepper, cilantro, bell pepper, carrots. Add water, reduce and simmer. 2. Cook covered for 15 minutes or until liquid is adsorbed and the rice is tender. Remove from heat. Let stand before serving. |
