Easy, tasty chicken entree! Ingredients:
3 whole chickens, cut into squares |
1 cup brown sugar |
1/2 cup olive oil |
1/2 cup balsamic vinegar |
1 cup prune, pitted |
1/2 cup pitted green olives |
1/2 cup capers |
2 tablespoons minced garlic |
salt and pepper |
1 cup dry white wine |
1/2 cup chopped flat-leaf parsley |
Directions:
1. Put chicken in sealable bag. Combine sugar, olive oil and vinegar. Stir in prunes, basil, olives, caper, garlic, salt, and pepper. Pour over chicken. Marinate for 8-10 hrs in fridge. 2. Arrange chicken in single layer with marinade in baking dish. Drizzle with wine. Bake at 350 for 1 hr, basting regularly. Remove the chicken and sauce and plate. Sprinkle with Parsley. |
