Broccoli with Sun-Dried Tomatoes and Pine Nuts
Ingredients:
1 bunch broccoli
8 oil-packed tomatoes, drained and slivered
2 garlic cloves
1 tablespoon olive oil
2/3 cup pine nuts, toasted
salt and pepper
Directions:
1. Combine the broccoli with enough water to cover in a saucepan. Boil until tender-crisp, drain. Plunge in ice water, drain. Saute the sun-dried tomatoes and garlic in the oil in a skillet until garlic is light brown. Add broccoli. Saute just enough to heat. Stir in nuts. Salt and Pepper.
