This was a real hit at a ladies dinner party I had in December. Everyone raved about it...honestly, it's really, really good (exclamation point). C'mon foodies, try this salad, it's better than it reads! Ingredients:
1 large head romaine lettuce |
1 cup shredded cheddar and jack cheese |
1 cup candied english walnuts |
1 red apple, cubed (not peeled) |
1 pear, cubed (not peeled) |
dressing |
1 tsp. dijon mustard |
1/2 tsp. salt |
1/2 cup sugar |
1/3 cup lemon juice |
2 tsp. chopped green onion |
2/3 cup salad oil, slowly |
1 tbsp. poppy seeds |
candied nuts |
1 1/2 cup raw walnuts |
1/2 cup sugar |
2 tbsp. butter |
1 tsp. vanilla. |
Directions:
1. Tear up romaine lettuce leaves, discarding rib. 2. Add cheese, candied nuts, red, apple and pear. 3. Mix dressing in a blender. 4. Slowly drizzle in the salad oil and add poppy seeds. 5. Do not refrigerate. 6. Place candied nuts ingredients in a skillet over low-med heat 7. and cook until sugar is golden brown, stirring constantly. 8. Cool. 9.
