Jumbo Pecan Date Oatmeal Cookies |

When my mom first made these I wasn't too excited to try them, because, well...there were no chocolate chips in them! Now they are one of my favorites. Ingredients:
1 cup butter |
3/4 cup sugar |
3/4 cup packed brown sugar |
1 1/2 cups flour |
1 teaspoon baking soda |
1 teaspoon vanilla extract |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
2 large eggs |
3 cups oats |
2 cups pitted dates, chopped |
1 cup pecans, chopped |
Directions:
1. Beat butter and sugars at med. speed with electric mixer until light and fluffy. Reduce speed to low and add flour, baking soda, vanilla, salt , cinnamon and eggs. Mix just until blended, scraping bowl occasionally. With spoon, stir in oats, dates and pecans. 2. Drop cookie dough by level 1/4 cup 3 inches apart on ungreased cookie sheets. 3. Bake cookies for about 20 to 25 minutes in a 350°F preheated oven. 4. Remove from sheet and cool on wire rack. |
