If you like big, soft, chewy oatmeal cookies, then you will love these. This recipe is from and is my favorite oatmeal cookie recipe. Ingredients:
2 cups flour |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
2 sticks butter, room temp |
1 cup sugar |
1 cup brown sugar, packed |
2 large eggs, room temp |
1 teaspoon vanilla extract |
2 cups quick-cooking oats |
1 cup raisins |
Directions:
1. Preheat oven to 400 degrees F. 2. Combine flour, baking soda, baking powder and salt in a medium bowl; set aside. 3. Cream butter & sugars until well blended. 4. Beat in the eggs, one at a time, blending well after each addition; beat in vanilla. 5. Add in the flour, slowly at the side of the bowl, with the mixer running on low. Blend 5 seconds with mixer on low, until ALMOST incorporated. The batter will be thick. 6. With a large rubber spatula, fold in oats & raisins. 7. Drop by rounded tablespoonful onto ungreased or parchment-lined cookie sheets 2 inches apart. 8. Cook 12-15 minutes. 9. Immediately slide liner w/ cookies onto cooling rack & let stand for 1-2 minutes; remove liner & cool thoroughly. |
