Grilled corn adds extra depth of flavor to this summer favorite. Great with grilled shrimp! Ingredients:
1 avocado, chopped |
15 1/2 ounces black beans |
1 roma tomato, chopped |
1 1/2 cups fresh corn |
1/4 cup lime juice |
1/4 cup cilantro, chopped |
1/3 cup extra virgin olive oil |
1 tbsp jalapeno, diced |
1/4 tsp salt |
1/4 tsp pepper |
Directions:
1. Mix all ingredients and refrigerate. |
