Made with old-fashioned oats and just a hint of sweetness. Delicious and healthy, it reheats well in the microwave for a quick weekday breakfast. Inspired by Jenny's Baked Oatmeal. Ingredients:
1 1/2 cups old fashioned oats |
1/2 cup dried cranberries or 1/2 cup raisins |
2 tablespoons chopped walnuts |
1 tablespoon brown sugar |
1 teaspoon baking powder |
1/2 teaspoon cinnamon |
1/8 teaspoon kosher salt (less if table salt) |
2 cups milk |
2 tablespoons butter, melted |
1 large egg, slightly beaten |
Directions:
1. Preheat oven to 350 degrees and grease a 2 quart casserole dish. 2. In a mixing bowl, stir all ingredients together. 3. Pour into prepared dish and cook for 40 minutes. 4. Top with brown sugar and cream. |
