I find the combination of flavors in this recipe to be perfect. To me, anyway. Share this with someone you really love, and you won't feel embarrassed if you have olive oil and juice from the tomatoes dripping down your chin. Read more . Quite the opposite, in fact-it's a very sensual eating experience. ;) Have some fresh bread on hand to soak up the juices in the plate. Ingredients:
2 large fresh meaty tomatoes |
salt & fresh ground pepper |
fresh mozzarella cheese (about 3 or 4 small rounds) |
roasted red pepper |
basil leaves (about 10 or so, thinly sliced) |
olive oil |
balsamic vinegar |
fresh crusty bread |
Directions:
1. Slice tomatoes about 1/2 inch thick and place on a serving plate. 2. Sprinkle with salt and pepper. 3. Slice the mozzarella about 1/4 inch thick, and place on top of the tomatoes. 4. Arrange slices of roasted pepper over the mozzarella. 5. Sprinkle with basil. 6. (To thinly slice the basil, stack the leaves, roll them up, and slice them across) 7. Drizzle with olive oil and balsamic vinegar. 8. Serve with the bread. |
