This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cunningham Estate in Mansfield, Texas in 1987. Ingredients:
1/4 cup fresh blackberries |
1/4 cup fresh raspberries |
1/4 cup fresh blueberries |
2 large fresh eggs |
1/2 ounce mint sprigs |
Directions:
1. Combine berries in bowl. 2. Prepare omelet. 3. Fill each omelet with about 3/4 cup filling then close. 4. Garnish with mint sprigs and powdered sugar. |
