Working at many Italian Deli's on the west coast I realy became fond of this quick and easy recipe, let me know what you think. Ingredients:
1lb tri-color-rotini pasta |
1 of each red, green, yellow, and orange bell peppers |
4 roma tomatos |
2 garlic cloves(pressed) |
1/2 medium red onion |
1/4 cup of sliced black olives |
1/2 lb genoa salami |
pinch of salt |
pinch of black pepper |
pinch of garlic salt |
1 tsp crushed red pepper |
2 cups newmans own family recipe italian dressing |
any italian herb that you like feel free to be creative |
1/4 cup of fresh grated parmesan or romano cheese |
garnish with fresh parsley |
Directions:
1. Cook pasta, according to directions, al dente. Drain, rinse with cool water. ( I always do a little olive oil in my warm pasta) 2. carmalize onions and garlic 3. In a large size bowl 4. Add Pasta, 5. onions and garlic 6. Julienne cut all vegatable ingredients including the salami (try to cut salami so the bit size pieces will be on every fork) and add to bowl, salt and peppers, black olives, Italian dressing and any herbs you like on Italian food.(I have some that just love) See Photo 7. Combine (toss) in bowl add parmesan or romano atop your creation with a few parsley leafs and Viva la Italy you now have a great salad that your friends will just eat up at partys.... 8. Enjoy |
