Joyce Hiblers Broccoli Cheese Soup |

A hearty Broccoli Cheese soup (with noodles!) perfect for staying warm on winter nights. Ingredients:
1 lg bunch broccoli, chopped (i saved time and substituted frozen broccoli from the bag... worked wonderfully) |
1/4 c. chopped onions |
2 qt. chicken broth |
1 bay leaf |
pinch thyme |
4 t. butter |
4 t. flour |
1 qt. half-and-half |
1 c. grated cheese or velveeta cheese |
2 c. cooked egg noodles |
Directions:
1. Simmer broccoli, onion and bay leaf in chicken broth until vegetables are crisp and tender. 2. Remove bay leaf. 3. Make sauce of butter, flour, and half-and-half. 4. Pour sauce into broth mixture. 5. Stir in cheese and egg noodles just before serving. |
