Wonderfully rich, moist muffins that will “make your eyes go wide and your mouth say howdy!” This recipe contains everything but the kitchen sink, so they gotta be good for you! Ingredients:
1 cup dark brown sugar |
11/2 cup oat bran |
11/2 cup oat flour (or whole wheat) |
2 teaspoons baking powder |
2 teaspoons baking soda |
1/2 teaspoon salt |
1 tablespoon cinnamon |
2 eggs |
1 tablespoon vanilla |
1/4 cup vegetable oil |
1 cup applesauce |
small can crushed pineapple, drained |
1 cup grated carrots and/or zucchini |
1/2 cup grated coconut |
1/2 cup raisins, dried cranberries or other berries |
1/2 cup chopped pecans (optional) |
Directions:
1. Preheat oven to 400 degrees (F) 2. Combine all the dry ingredients in a large bowl. 3. Add eggs, vanilla, oil, applesauce, pineapple, carrots/zucchini and coconut and mix with a spoon until everything is moistened. 4. Add remaining ingredients and spoon into muffin pans. 5. Bake at 15-20 minutes |
