I FIX THIS DISH AND SERVE IT WITH BAKED HAM FOR THE HOLIDAYS OR WHEN WE JUST HAVE COMPANY OVER. IT'S QUICK AND EASY.
Ingredients:
2lbs of cooked navy beans (or you can use canned navy beans about 4 cans. make sure the beans are drained.
1medium onion diced
i can of crushed pineapple drained and 1 can of pineapple tid bits. drained. buy the large cans .
use the juice of the pineapple to add moisture to the beans mix with brown sugar
3/4 c. to 1c. of chopped bacon ( you can fry the bacon first or just put in beans uncooked. i use it uncooked my self. for a change use sauage, link or ground.
3/4c. of brown sugar (can use splenda brown sugar).
1 c. to 1- 1/2 c. of catsup.
Directions:
1. COOK NAVY BEANS THE NIGHT BEFORE AND PLACE IN FRIGERATOR OVER NIGHT
2. CHOP ONION AND SET ASIDE.
3. CHOP THE BACON AND SET ASIDE OR BROWN IN SKILLET.
4. DRAIN THE PINEAPPLE AND SAVE JUICE. SET ASIDE.
5. MEASURE OUT BROWN SUGAR AND PLACE IN PINAPPLE JUICE AND MIX WELL THEN ADD THE CATSUP AND MIX AGAIN . SET ASIDE.
6. TAKE THE BEANS OUT OF THE FRIGERATOR AND PLACE IN A BIG ROASTING PAN ADD: ONION, BACON AND PINAPPLE. MIX THESE INGREDIENTS WELL THEN POUR THE PINEAPPLE,BROWN SUGAR AND CATSUP OVER THE BEANS. YOU CAN ADD SALT AND PEPPER TO TASTE. MIX WELL AGAIN AND PLACE LID ON PAN AND PUT INTO THE OVEN. BAKE AT 350 DEGREES FOR ABOUT 2 HRS OR TILL JUICE HAS COOKED INTO THE BEANS BUT NOT DRYED OUT SO CHECK OFTEN. IF THEY ARE STARTING TO DRY OUT ADD A LITTLE WATER.
