These muffins are so fluffy and delicious. Theya would make a great addition to your breakfast or brunch table. Ingredients:
1/2 cup butter |
11/4 cup sugar |
2 cups flour |
2 teaspoons baking powder |
2 eggs |
1/2 teaspoon salt |
1/2 cup milk |
2 cups frozen or 3 cups fresh blueberries |
2 tablespoons sugar for topping |
Directions:
1. Cream sugar and butter on low. 2. Add eggs one at a time, mix well. 3. Sift dry ingredients - add alternately with milk. 4. If frozen blueberries, sprinkle with flour and add 1/2 cup at a time - stirring by hand - add rest of blueberries. 5. Grease and flour muffin tins. 6. Bake at 375° for 25-30 minutes for regular size muffins. 7. Leave muffins in pan for approximately 15-20 minutes to cool. |
