John's Radish-Potato Soup (For Veggie Haters!)

This soup doesn't taste like radishes at all, yet it contains a healthy dose of veggies, fiber (2.8g per serving), and Vitamin C (39% per serving!). Would also be good with spinach added. It is mild and thick, and excellent on a warm day. You won't believe you're eating your veggies! Each serving about 1 cup.
Ingredients:
1 lb. radishes
1 medium baking potato, peeled
1 medium onion, peeled
2 cloves garlic
1/2 tsp thai red curry paste
Directions:
1. Boil all of the vegetables (garlic, onion, potato, radishes) in a pot on the stove until soft.
2. Puree them all together in a blender/Magic Bullet with water, until it reaches the consistency you desire. Smooth and a little thick is best.
3. Pour into bowls, add salt and pepper to taste. Also, adding 1 tbsp of sour cream can add a little more pep to the flavor if you find it bland. Count those calories separately, though!
4. Heats up great in the microwave!
