John's Favorite Carrot Cake With Cream Cheese Frosting |

I made this cake for my Dad's birthday one year, but my brother in law fell in love with it, and now I make it for his birthday every year. And it is soooo easy. Ingredients:
3 cups grated carrots (i buy the pregrated in a bag) |
2 cups all-purpose flour |
1 teaspoon baking powder |
2 teaspoons baking soda |
1/2 teaspoon salt |
2 cups sugar |
1 teaspoon ground cinnamon |
4 eggs, well beaten |
1 1/4 cups vegetable oil |
1 teaspoon vanilla extract |
cream cheese frosting |
1 (8 ounce) package cream cheese, softened |
1/2 cup butter, softened |
1 (16 ounce) package powdered sugar, sifted |
1 teaspoon vanilla extract |
Directions:
1. Cake:. 2. Combine first 7 ingredients; stir in eggs, oil and vanilla, mixing well. Pour batter into 3 greased and floured 9 inch round cake pans. Bake at 350F for 30 minutes or until wooden pick inserted in middle comes out clean. Cool in pans 10 minutes; remove from pans and cool on wire racks completely. Spread with cream cheese frosting. 3. Cream Cheese Frosting:. 4. Combine cream cheese and butter, beating until smooth. Add powdered sugar and vanilla; beat until light and fluffy. 3 cups. |
