My mom got this recipe from a friend in Pennsylvania. It's a belly warming casserole that doesn't take long to put together. Ingredients:
1 lb ground beef |
1 (1 1/4 ounce) package sloppy joe seasoning mix |
1 (6 ounce) can tomato paste |
1 1/4 cups water |
2 cups dry elbow macaroni |
1 (15 1/4 ounce) can corn |
2 cups sharp cheddar cheese, shredded |
Directions:
1. Cook macaroni in boiling water. Drain and set aside. 2. Brown beef in a large skillet.Drain. 3. To beef add, sloppy joe mix, tomato paste and water. 4. Bring to a boil. Reduce heat and simmer 10 minutes. 5. Add the macaroni, corn and 1 cup of cheese to the beef. 6. Pour mixture into a 9x13, buttered casserole dish. 7. Sprinkle with remaining cheese. 8. Bake uncovered at 350* for 45 minutes or until hot. |
