This is my grandmothers recipe. It is similar to corn bread, but served hot for breakfast with butter, honey, and milk. I know it sounds weird, but it's the best winter breakfast ever! To serve, you split a slice open in a cereal bowl, spread with butter and then squirt some honey on it, and then pour fresh milk over top and eat hot. Read more . Delicious, filling, and cheap!
Ingredients:
1 cup flour
1/4 cup sugar
4 tsp. baking powder
3/4 tsp salt
1 cup yellow cornmeal
2 eggs
1 cup milk
1/4 cup vegetable oil
Directions:
1. *Sift together first four ingredients.
2. Stir in cornmeal.
3. In a separate bowl, beat liquid ingredients.
4. Add liquid ingredients to flour mixture and stir just until moistened-even if it is still lumpy-don't over stir!
5. Pour into a well greased 9x9 pan and bake at 425 for 20-25 minutes.
6. Cut into squares and serve hot with butter, honey, and milk poured over top in a cereal bowl.
7. ...Leftovers are good for a snack too, it's good a little stale :)
