This was my mama's way to make southern-style greens. She liked mustard & poke-salad greens best, but you can use collards, kale, swiss chard or a combination. Whatever you like best. Ingredients:
6 cups greens; washed, dried well & sliced |
3 tablespoons bacon grease |
1 teasp. of vinegar-liquid from bottled whole, small, green, hot louisiana peppers |
1/2 teasp. white vinegar |
salt & black pepper to taste |
Directions:
1. Heat the bacon grease in a heavy skillet over medium heat. Add the sliced greens & saute, stirring, for 4 or 5 minutes. Turn heat to low. Add remaining ingredients except for salt. Bring to boil & then cover & simmer on very low heat for 20 minutes, or until greens are tender. Taste greens & add the salt if necessary. Serve with fried chicken, ham, or whatever meat you like & of course, biscuits! |
