John Wayne's Favorite Lower-Fat Casserole |

Ingredients:
1/2 cup evaporated skim milk |
2 tablespoons unbleached all-purpose flour |
1/2 teaspoon pepper, freshly ground |
2 (4 ounce) cans mild green chilies, diced |
16 ounces cheese, grated (reduced fat, four-cheese mexican blend) |
5 egg whites |
Directions:
1. Preheat the oven to 325 degrees. 2. Spray a 9x13 inch glass casserole dish with non-stick spray. 3. Set aside. 4. Mix the milk, flour and pepper in a bowl. 5. Combine with the chiles and cheese. 6. Set aside. 7. Beat the egg whites with a mixer on high speed until peaks form, about 2 minutes. 8. Fold into the cheese mixture. 9. Pour into the prepared dish. 10. Bake for 35 minutes. 11. Serve with salsa if desired. |
