This is the recipe for Joe's Stone Crabs' famous chunky Vinaigrette. It's a quick and easy recipe that you'll be eating for days. You can eat it on a big salad or something as plain as lettuce alone. This is the official recipe, but if I recall correctly, the dressing has chopped up hard boiled egg whites in it as well. Read more . I could be wrong, but it adds a little something (not to mention protein). Oh, and you can toss this on something as simple as a wedge of lettuce or tomatoes. Make a ton of this stuff and store it in your fridge. You’ll thank me later.
Ingredients:
1/4 cup chopped onion
3 tbsp minced fresh parsley
2 tbsp chopped pimento
1 1/2 tsp sugar (sub. with splenda if you’d like)
1 tsp salt
1/2 tsp cayenne pepper
1/2 tsp drained capers (optional)
1/3 cup wine or cider vinegar
3/4 cup olive oil
Directions:
1. Whisk together all the ingredients. Store in refrigerator.
