This is a breakfast dish from a restaurant in San Francisco. Ingredients:
6 large eggs |
hot pepper sauce |
salt to taste |
1/2 teaspoon dried basil or oregano |
1/2 teaspoon freshly ground black pepper or more to taste |
1 tablespoon unsalted butter |
1 tablespoon olive oil |
1 medium yellow onion, diced |
1/2 pound lean ground beef |
3/4 to 1 pound fresh spinach (baby spinach or crinkly savoy variety) |
Directions:
1. Crack the eggs into a small bowl and add a splash or two of hot sauce,salt, basil or oregano and pepper 2. Whisk just enough to combine 3. Melt butter with oil in a large skillet over medium heat 4. Add onion and saute until soft, about 4 minutes 5. Add beef and continue cooking until brown, breaking the meat into small pieces as it cooks 6. Cover beef mixture with the spinach, place a lid on the skillet and cook for about 3 minutes, just until the spinach wilts 7. Stir the mixture, cooking briefly to eliminate excess liquid 8. Pour the egg mixture over all, stirring with a spatula from the bottom until the eggs begin to set 9. Remove from the heat and stir a few more times 10. Serve immediately |
