1 tablespoon olive oil |
2 garlic cloves, minced |
1 lb lean ground beef |
2 eggs, beaten |
salt & pepper |
nutmeg (optional) |
2 green onions, chopped |
1/4 lb mushroom, sliced |
1 bunch spinach, coarsly chopped |
Directions:
1. Saute the garlic quickly in the olive oil in a skillet. Add the ground beef, salt and pepper to taste (and a pinch of nutmeg if using). Cook over high heat so the beef browns rather than grays . 2. When beef is done, reduce heat to medium, stir in the eggs and cook only until the eggs are set. TURN OFF THE HEAT. 3. Stir in the spinach, green onions and mushrooms. Stir well. |
