This marbled cheesecake was popular menu item at the Jockey Club Restaurant in Washington, DC many years ago. It no longer appears on their menu but it is one of our family's favourite cheesecakes. From the October 1981 Bon Appetit. Ingredients:
1 1/2 cups graham cracker crumbs (vanilla wafer crumbs are good, too) |
1/2 cup sugar |
1/2 cup butter, melted |
1 lb cream cheese, at room temperature |
1/4 cup sugar |
2 eggs |
2 tablespoons fresh orange juice |
3/4 tablespoon sour cream |
1 teaspoon vanilla |
1 1/2 ounces unsweetened chocolate, melted |
1/2 cup sour cream |
1 tablespoon sugar |
1 1/2 teaspoons vanilla |
Directions:
1. For crust: Combine all three ingredients in a medium bowl and mix well. Pat into the bottom and sides of a 9 spring form pan. Refrigerate until ready to use. 2. For filling: Preheat oven to 350ยบ. Beat cream cheese until softened. Mix in sugar. Add eggs one at a time mixing well. Blend in orange juice, sour cream and vanilla. Add several heaping tablespoons of cheese mixture to melted chocolate to loosen, then add chocolate to cheese mixture, stirring a little with a spoon to create a marbled effect. Pour into crust and bake 45 minutes until set. 3. For topping: Combine remaining ingredients and mix well. Let cheesecake cool slightly. Spread topping over cheesecake and bake 15 minutes longer. Refrigerate until serving time. |
