These are amazingly healthy - for even healthier diabetic friendlier cookies you can use Agave instead of the sugars listed. Ingredients:
1 cup flax, meal |
1/3 cup brown sugar, firmly packed |
1/2 cup granulated sugar |
1/3 cup egg whites, or 2 eggs |
1/3 cup soy milk |
1 tsp vanilla extract |
1 cup whole wheat flour |
1 tsp baking soda |
1 tsp ground cinnamon |
1 pinch of salt |
3 cup oats, uncooked |
1/2 cup raisins |
1/2 cup chocolate chips (milk chocolate if you want it extra sweet) |
Directions:
1. Heat oven to 350 F 2. Mix sugars and flax. 3. Add eggs, soy milk and vanilla; beat well. 4. Add combined flour, baking soda, cinnamon and salt; mix well. 5. Stir in oats, chocolate chips and raisins; mix well. 6. Drop by rounded tablespoonfuls (or large teaspoonfuls if you want smaller cookies) onto un-greased cookie sheet (I like lining the cookie sheet with aluminum foil). 7. Bake l0 to l2 minutes or until light golden brown. 8. Cool l minute on cookie sheet 9. Remove to wire rack. Cool completely. 10. Yields about 2 to 4 dozen cookies depending on how big/small you make them. |
