Joanne's Peanut Butter Pie |

My neighbor JoAnne makes this and she always brings me a piece because she knows how much I love peanut butter. It is rich so large pieces are not necessary! Ingredients:
3/4 cup powdered sugar |
1/2 cup peanut butter |
1/2 cup sugar |
1 2/3 cups milk |
6 tablespoons flour |
1/4 cup peanut butter |
1/2 teaspoon salt |
3 egg yolks |
1 teaspoon vanilla |
3 egg whites |
6 tablespoons sugar |
Directions:
1. Crust: mix powdered sugar and peanut butter until crumbly. Spread 2/3 of the crumbs into a 9 shell. Set aside remaining 1/3 for top. 2. Filling: mix sugar, milk, flour and salt in a saucepan. Cook until thickened. Can be put in a bowl and cooked in the microwave until thickened also. Then add beaten egg yolks and peanut butter. Cook again until thicker. Add vanilla and mix. Pour over crumbs in pie shell. 3. Topping: mix egg whites and sugar til slightly stiff. Pour over top of pie. Sprinkle with remaining crumbs. 4. Bake at 400 degrees for 10 min or until brown. 5. Cool completely. |
