I remember Mom finding this when I was younger than 5 (not in school), don't know where she got it. Has been a Christmas tradition ever since! STILL a treat! She submitted the recipe, when I was little, to Mary Starr - local cooking celebrity that actually had her own local cooking show late 60's early 70's, and it appeared in Mary Starr's cookbook with 3 stars! Read more ! (Highest rating!). Cook time is for baking cookies, the icing is cooked on the stove. Ingredients:

1.5 c all-pupose flour |
1/2 t. baking soda |
1/2 t salt |
2/3 c brown sugar |
1/2 c shortening |
1 egg, unbeaten |
1/4 c marachino cherry juice |
2 t milk |
2 sq unsweetened chocolate, melted |
1/4 c chopped marachino cherries |
18 jumbo marshmallows - cut in half |
cup hot water (to dip knife in) |
icing: (doubles as mom's fudge recipe) |
2 c sugar |
1/4 c cocoa |
1 small can evap. milk (2/3 c) |
1 stick margarine |
10 jumbo marshmallows |
Directions:
1. COOKIES: 2. Mix and set aside: flour, soda & salt 3. Cream brown sugar and shortening well 4. Blend in unbeaten egg 5. Beat well. 6. Stir in half the dry ingredients 7. Add marachino chrry juice & milk 8. Stir in remaing dry ingredients 9. Mix well 10. Blend in melted chocolate 11. Fold in cherries 12. Drop by rounded teaspoon onto ungreased cookie sheet 13. Bake at 350 for 6-7 minutes 14. While cookies are baking, cut marshmallows in half, dipping knife in hot water to prevent sticking) 15. Immediately after taking cookies from onve, press one marshmallow half, cut side down, on each cookie 16. Frost with chocolate icing. 17. ICING: 18. Bring first 5 ingredients to a boil. 19. Cook 6 minutes on medium heat 20. Remove 21. Add 10 marshmallows 22. Beat to spreading consistency, and spoon over marshmallows (Beat by hand, in the pan - not transferred to mixer - that doesn't work!). |
