Read more ...If I'm making the dressing ahead of time, I add the cranberries to let them soften a bit.
Ingredients:
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
1/2 cup white sugar (or less - this makes a very sweet vinaigrette)
2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup white wine vinegar (or red wine vinegar)
1/4 cup cider vinegar
1/2 cup olive or canola oil
Directions:
1. In a large bowl, combine the spinach with the cranberries.
2. In a medium bowl, whisk together the sugar, onion, paprika, white wine vinegar, cider vinegar, and oil.
3. Toss with spinach just before serving.
