A friend shared this recipe with me...and I just love it! You can toss the salad with toasted almonds, and add sesame seeds or poppy seeds to the dressing to give the salad a little extra flair or leave it simple like I do. Read more ...If I'm making the dressing ahead of time, I add the cranberries to let them soften a bit. Ingredients:
1 pound spinach, rinsed and torn into bite-size pieces |
1 cup dried cranberries |
1/2 cup white sugar (or less - this makes a very sweet vinaigrette) |
2 teaspoons minced onion |
1/4 teaspoon paprika |
1/4 cup white wine vinegar (or red wine vinegar) |
1/4 cup cider vinegar |
1/2 cup olive or canola oil |
Directions:
1. In a large bowl, combine the spinach with the cranberries. 2. In a medium bowl, whisk together the sugar, onion, paprika, white wine vinegar, cider vinegar, and oil. 3. Toss with spinach just before serving. |
