The lady I work for (Jill) developed this recipe with her own Jill's Apple Pie Jam (good stuff), but I didnt have it in the kitchen this morning so I made my own version. This is good for sandwiches or (my favorite) over mashed potatoes, very delicious. This works best in the crockpot. Ingredients:
3 -4 lbs boneless chuck roast |
2 (14 1/2 ounce) cans chopped tomatoes, drained |
1 medium onion, sliced |
4 tablespoons flour |
2 teaspoons salt |
1 teaspoon garlic powder |
1 teaspoon black pepper |
1 1/2 cups applesauce |
16 ounces sauerkraut, drained |
1/2 cup brown sugar |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1 bay leaf |
Directions:
1. Heat skillet over med high heat. Trim excess fat from roast and place in preheated pan. Brown roast on all sides. 2. In crockpot, add tomatoes,onion, flour, salt,pepper,garlic pwdr, applesauce,sauerkraut, brown sugar, cinnamon, nutmeg and bay leaf. Give it a little stir and place browned beef in crock pot. Set crock pot to low 8-10 hours or till beef is falling apart. Shred beef and and mix with sauce. Serve over mashed potatoes or on rolls. |
