A new twist on Fajita that livens up an old favorite. Ingredients:
1 cup jiffy baking mix |
1/3 cup water |
1/2 lb boneless skinless chicken breast |
2 tablespoons oil |
1/2 cup thinly sliced green bell pepper |
1 small sliced onion |
1 cup salsa |
1 cup shredded cheese |
Directions:
1. Preheat oven to 400°. 2. grease 12 pizza pan. 3. Cut chicken into strips. 4. Heat skillet and add oil. 5. Saute chicken for 5 minutes. 6. Add green pepper and onion. 7. Continue cooking until tender. 8. Remove from heat and add salsa. 9. Set aside. 10. For crust, blend baking mix with water. 11. Turn dough on surface dusted with baking mix or flour. 12. Knead until dough is not sticky. 13. Press on prepared pan. 14. Spread 1/2 cup cheese on crust and top with chicken mixture. 15. Sprinkle remaining cheese on top. 16. Bake 15-20 minutes. |
